This course will take you through some of the classic pasta dishes of the Sicilian region of Italy. You will learn the trademark identifiers of a Sicilian dish and a little bit of history about their origin. Of course, this means we will be making some of the dishes as well! In the class, we will make fresh cavatelli with tomatoes in a wild mint pesto as well as a fresh spaghetti in a pecorino olive oil sauce with toasted bread crumbs. For this class, it is recommended but not required to have some prior knowledge of pasta making. Food fees are included in tuition.
